Wheat-free, dairy-free pancakges

As it’s Shrove Tuesday, here’s a pancake recipe that’s suitable if you’re following our Bootcamp nutrition plan, as it’s wheat- and dairy-free, so you can tuck in along with everyone else today!

Ingredients:

60g Spelt flour
2 eggs
120ml rice milk
120ml water
pinch salt
1 tsp cinnamon

Method

Heat a little olive or coconut oil in a frying pan.
Beat all ingredients together and pour mixture in to pan to make individual pancakes – enough to cover bottom of pan and not be too thick.
Serve with berries, warm softened fruit or agave nectar for a sweet treat, or for a savoury filling, add roasted vegetables and omit the cinnamon from the batter mix.
